Chocolate Chip Cookies

Ingredients

Group 1

  • 3/4 C butter
  • 1 1/2 C brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp cocoa powder

Group 2.

  • 1 1/4 C flour
  • 1/2 C rolled oats
  • 1/2 C bran or wheat flake cereal
  • 1 tsp baking soda see note
  • 1/2 tsp salt
  • 1 C chocolate chips

Instructions

  1. Cream together the Butter and Brown Sugar (You may use an electric mixer, but it is not necessary).
  2. Add the remaining ingredients from group 1 and stir until well blended
  3. Measure out the bran or wheat flakes into a small bowl and smash them down until you get a 1/2 cup.
  4. Put the smashed flakes and the oats into a blender or food processor and process until almost powdery (about 20 seconds).
  5. Mix the powdered oats and flakes and remaining group 2 ingredients together and then add to the group 1 ingredients.
  6. Stir until well blended (at this point, do not use an electric mixer).
  7. For each cookie, use enough dough to make a walnut sized ball, and arrange on baking sheet.
  8. Bake at 350 for minimum of 11 minutes, but no longer that 13.
  9. Cookies will feel soft but will firm up when cooling.

Recipe Notes

The baking soda reacts with the cocoa powder and brown sugar. Bake the cookies within 10-15 minutes after you mix the wet and dry ingredients together.
You can substitute Baking Powder for the Soda. It will result in a slightly "cakier" cooky.
