Fancy Egg Scramble
Servings 6
Ingredients
- 1 cup Canadian bacon diced
- 1/4 cup green onion chopped
- 3 tablespoons butter or margarine
- 12 eggs beaten
- 1 3 ounce can mushroom stems and pieces drained
- 1 recipe Cheese sauce following
- 4 teaspoons butter or margarine melted
- 2 1/4 cups soft bread crumbs (about 3 slices)
- 1/8 teaspoon paprika
Cheese sauce
- 2 tablespoons butter or margarine
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk
- 1 cup shredded American cheese
Instructions

In a large skillet, cook bacon and onion in the butter or margarine until onion is tender but not brown

Add eggs and scramble until just set

Fold in mushrooms and cooked eggs into Cheese sauce (see below)

Turn into a 12"x7" baking dish

Combine remaining melted butter, crumbs, and paprika; sprinkle over eggs

Cover, chill until 30 minutes before serving

Bake, uncovered in 350F oven for 30 to 45 minutes
To make Cheese sauce

Melt butter
-
blend in flour, salt and pepper

Add milk and cook until bubbly.

Stir in American cheese until melted.
