Brien’s Favorite Pie
Lemon Meringue Pie
- 1 9 " Pre-baked pie shell
- 1/2 cup flour
- 1 1/2 cups water or milk
- 1 tablespoon lemon rind
- 1 1/4 cups sugar
- 1/2 cup lemon juice
- 3 egg yolks
- 3 egg whites
- 6 tablespoons sugar
Preheat oven to 350 degrees.
Mix flour, sugar, and salt.
Add water and egg yolks.
Cook ten minutes over low heat in a saucepan, stirring.
Remove from heat, add lemon juice and rind and cool.
Fill cooked pie shell with mixture.
Whip egg whites gradually adding sugar until stiff peaks form
Spread on pie, covering entire surface.
Bake 12 to 15 minutes until meringue is golden.
Let cool at room temperature before serving.
