So this really isn’t steak, and nothing is chopped… but it wouldn’t sound as good if it was called “Ground Beef on Mashed Potatoes” now, would it?
I grew up in Long Beach, California during the 60s. When I was in elementary school, the schools would have actual chefs that would prepare the lunch meals in the kitchen – they weren’t just boxed, pre-packaged lunches. The Sunday paper would publish the weekly menus and my sister and I would always look for Chopped Steak on Mashed Potatoes.
Several years later, the paper published the actual recipes that were used to prepare these lunches, and so I had to include this one here. So, once again, it’s really just ground beef in gravy, but it’s simple, quick and easy – and the kids love it!
