Potato Leek Soup

Ingredients

  • 1 1/2 cups chopped leeks
  • 1 1/2 cups diced potatoes
  • 1 quart chicken broth
  • salt and pepper
  • 1 cup canned milk

Garnish

  • Sour Cream
  • Parsley or Green Onions

Instructions

  1. Cook potatoes and leeks separately in broth until tender
  2. Mash Leeks (blend if desired)
  3. Coarsely mash potatoes with a masher
  4. Combine with milk and heat through

To Serve

  1. Pour in Bowls
  2. Add a dollop of Sour Cream
  3. Sprinkle with Parsley or Green Onions
