Joe's Special from Sausalito

Ingredients

• 10 ounces frozen chopped spinach thawed, (1 package)
• 1 tablespoon olive oil
• 1 tablespoon butter
• 1 pound ground beef
• 1 small onion chopped
• 1/2 teaspoon basil
• 1/4 teaspoon ground marjoram
• 1/4 teaspoon oregano
• 4 eggs
• 1 teaspoon salt
• 1/4 teaspoon pepper

Instructions

1. Drain spinach.
2. Heat oil and butter, brown meat.
3. Add onion and cook until tender but not browned.
4. Add spices and spinach.
5. Cook until liquid evaporates.
6. Beat eggs, add and cook until set.
